Taco Soup (for my freezer)

I made an old favourite, Taco Soup this morning & managed to make enough that it will do 8 meals for my family!

It took less than 1 hour & all it needs to be ready to eat after taking it from the freezer is to be defrosted warmed through (which I like to do in my slow cooker on the ‘keep warm’ setting for the day)

Thai Chicken Salad

This salad is delicious, perfect for a summer’s evening! It is really easy & fast¬†to prepare & provides a change to lettuce as a base

You can also change some of the ingredients to suit your palate, give it a try one of these hot days when you don’t want to cook!

Serves: 4                    Calories: 239

  • 6 cups Cabbage – shredded
  • 1¬†1/2 cups Chicken Breast – shredded
  • 1 large Carrot – grated
  • 1/4 cup Peanuts/Cashew Nuts – chopped
  • 2 Green Onions –¬†thinly sliced
  • 2 tbsp Cilantro – finely chopped
  • 1 Avocado –¬†peeled¬†& diced
  • 1/4 cup Peanut Butter
  • 2 tbsp Soy Sauce
  • 2 tbsp¬†Rice Vinegar
  • 1 tbsp¬†Lime Juice
  • 1 tbsp Sugar –¬†or more, to taste

Put cabbage in a large salad bowl & top with chicken, carrot, nuts, onion, cilantro & avocado

Place the remaining ingredients plus 2 tbsp water into a small bowl & whisk until thoroughly mixed. Pour over the salad & gently toss to combine

Hoisin Meatballs

It has been a long time since I posted something new, but over the next few days I should have 3 new recipes up here. We went away for 8 weeks to England & while there I hardly cooked a thing! It was so nice ūüôā We are now back & routine is getting back to normal, although it has been really hot here over the past week.

A great dish from Damn Delicious,¬†really quick & easy to prepare & didn’t heat up the house too much!

The kids were not fans of the hoisin sauce, but I LOVED them! It took about 30 minutes in prep & cooking time together, along with some rice & steamed broccoli it made for a really delicious dinner

Serves: 4                    Calories: 326

  • 1 lb Ground Beef
  • 1 tsp Sesame Oil
  • 1/2 cup Breadcrumbs (I used Panko)
  • 1/4 tsp Ground Ginger
  • 1 large Egg
  • 2 cloves Garlic – minced
  • 3 Spring Onions – thinly sliced (extra for garnish)
  • Sesame Seeds – for garnish
  • 1/4 cup Hoisin Sauce
  • 2 tbsp. Rice Vinegar
  • 1 tbsp. Soy Sauce
  • 1/2 tsp Sesame Oil
  • 2 cloves Garlic – minced
  • 1/2 tsp Ground Ginger

Preheat oven to 400¬įF/200¬įC/Gas Mark 6

Line a large baking sheet with parchment paper & set aside

In a large bowl, combine the first 7 ingredients: beef, oil, breadcrumbs, ginger, egg, garlic & onions

Using a wooden spoon or clean hands, stir until well combined & roll the mixture into balls to form 18-20 meatballs

Place the meatballs onto the baking sheet & bake for 12 minutes, or until each ball is browned & cooked through

While the meatballs are cooking, make the sauce: Whisk together hoisin sauce, rice vinegar, soy sauce, sesame oil, garlic & ginger

Serve meatballs immediately with the hoisin sauce & garnished with spring onions & sesame seeds

These pancakes are good for any time of the day. The kids love having pancakes for breakfast or dinner & were even happier this morning when I put chocolate chips in the batter!

Fish Pie

I can’t believe how long it has been since I last posted, I have been so busy that making new dishes is not something I have had much time for, but here is one that I made back in April that is so delicious!

I will be in & out of posting over the spring/summer as we are off on our holiday to England, but maybe I will just have to post some of our food experiences over there!

This was so delicious I just wanted to keep eating, I really should make more meals with fish.¬†The most significant reason I don’t¬†is¬†because getting fresh fish here is so hard. I am really looking forward to being able to get it when we go for our holiday to England! Mmmm, fish & chips ūüôā

It took about an hour to make from start to finish, so pretty easy to make on a day that dinner time is not rushed & perfect for Good Friday (which was when I made it) A perfect British dinner from About.com

Serves: 4                    Calories: 294

  • 250 ml Fish Stock
  • 250 ml Milk
  • 12 oz Assorted Fish Pieces
  • 1 Bay Leaf
  • 750 g Mashed Potatoes – warm
  • 2 oz Butter
  • 1 medium Leek – washed & finely sliced (white part only)
  • 2 oz¬†All-Purpose Flour
  • 1 tbsp Parsley – finely chopped
  • Salt & Pepper
  • Handful Grated Cheese (optional)

Preheat oven to 350¬įF/180¬įC/Gas Mark 4

Pour fish stock & milk into a large saucepan & bring to a very gentle simmer

Add the fish pieces & bay leaf & poach for 5 minutes

Remove the fish with a slotted spoon & set aside in a bowl. DO NOT THROW AWAY stock & milk, you will need it!

Melt the butter in a medium saucepan, over a medium heat. Add the sliced leeks and cook for 5 minutes until the leeks are soft

Whilst still hot, add the flour & stir well with a wooden spoon. Pour the fish stock & milk into the pan & stir again.

Raise the temperature & cook for 3 minutes until the sauce is slightly thickened. Turn off the heat & remove the bay leaf.

Add the fish, chopped parsley & season with salt and pepper. Put aside

Place the fish and sauce into an ovenproof dish, cover with a thick layer of mashed potato fluffed up with a fork

Sprinkle with grated cheese if using

Put the dish onto a baking sheet and cook in the center of the preheated oven for 20 – 30 minutes or until the sauce is bubbling beneath the potatoes. Serve immediately
