Creamy Potato Soup


What do you need on a cold snowy evening when we have had a teasing of spring already??? Hot Soup!!!!

Serves: 12                    Calories: 330

  • 10 medium Potatoes – peeled & chopped
  • 2 medium Carrots – sliced
  • 2 Celery Stalks
  • 1/2 cup Onion – chopped
  • 1 clove Garlic – crushed
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 3 cups Chicken Broth
  • 3/4 cup Butter
  • 1 1/2 tsp Salt
  • 3/4 cup Flour
  • 2 cans Evaporated Milk

In a large saucepan, add the potatoes, carrots, celery, onion, garlic, salt, pepper & chicken broth

Add enough water to cover the vegetables, bring to a boil & simmer for 15 minutes or until the vegetables are tender

Blend everything together & return to the saucepan

In a medium saucepan, melt the butter, stir in the salt & flour to make a smooth paste

Whisk in the milk to make a smooth sauce, stir into the soup & cook until thickened

Garnish with crumbled bacon, cheese & spring onions
