Quinoa Salad


My kitchen felt like it was summer this afternoon while I was making dinner. I tried a new dish of quinoa & vegetables to go along with my Pinterest made popular brown sugar glazed pork chops.

You must give it a try, it was definitely worth it & only 341 calories per serving

Serves: 6                    Calories: 341

  • 1 cup Quinoa
  • 1 clove Garlic – minced
  • 1 large Shallot – finely diced
  • 1 Jalapeno – seeded & finely diced
  • 3 1/2 tbsp Lime Juice
  • 1/3 cup Olive Oil
  • 1 Sweet Bell Pepper – finely diced
  • 1 small Cucumber – finely diced
  • 1/2 cup Cilantro – chopped
  • 2-3 ripe Avocados – sliced

In a large saucepan, boil 2 cups water seasoned with salt. Cook until tender & the water is gone

Drain any water that may be left & spread it out on a baking sheet to cool down

In a small bowl, add the garlic, shallot, jalapeno & lime juice, season with salt & stir together

Let the vinaigrette sit for 5-10 minutes, add the oil & whisk together. Add more salt or lime juice to taste

In a medium bowl, add the quinoa, pepper, cucumber & cilantro, drizzle the vinaigrette over the salad & fold in to combine. Add salt or lime juice to taste

Arrange slices of avocado on plates & spoon the quinoa salad over, garnish with cilantro & serve
