Roasted Sausage & Vegetable Casserole

Do you want something to brighten up a cold day, this will do it! I made this today for dinner & had a really blonde moment. I figured out how long dinner would take to cook & subtracted that from the time I wanted to have dinner ready. The only problem in all this is that I subtracted 1 hour too many so that dinner was ready at 4 instead of 5. Ha ha ha, don’t worry, I have laughed about it all & hope it won’t be too ruined by dinner time 🙂

Well, I thought this was very delicious & filling. Thanks to Kayotic Kitchen for their wonderful recipe which can be adapted depending on how many people are eating & what vegetables you have in your fridge

Serves: 4                    Calories: 639

  • 4 Italian Sausages – browned & cut in half
  • 1 large Onion – peeled & quartered
  • 3 large Carrots – peeled & cut into spears
  • 2 Parsnips – peeled & cut into spears
  • 5 Potatoes – peeled & quartered
  • 1 Red Pepper – sliced
  • 3 cloves Garlic – minced
  • 1/2 cup Chicken Broth
  • 2 tbsp Oil
  • 2 tbsp Italian Seasoning
  • 4 tbsp Balsamic Vinegar

Preheat oven to 450°F/230°C/Gas Mark 8

In a large baking dish or roasting tin, put the onions, carrots, parsnips, potatoes & pepper

Whisk together garlic, chicken broth, oil & Italian seasoning & pour over the vegetables, stir them around to ensure they are all coated

Put dish in the preheated oven & cook, covered for 45 minutes

While the vegetables are cooking, brown the sausages & cut them in half

After the 45 minutes are up, stir around the vegetables & add the sausages & balsamic vinegar

Cook uncovered for 15 minutes, turn the sausages & cook uncovered for a further 15 minutes

Dish up on plates & enjoy!
