Italian Sausage Pepper Pasta

This dish is very simple & quick to make with ingredients that I keep in my house most of the time. It had a beautiful flavour which complimented our meal of homemade pizza, pasta & salad!

Serves: 6                    Calories: 497

  • 6 Italian Sausages – sweet, mild, hot or a combination
  • 2 tbsp Butter
  • 1 Yellow Onion – sliced
  • 1/2 Red Onion – sliced
  • 4 cloves Garlic – minced
  • 1 large Red Bell Pepper – sliced
  • 1 Yellow/Orange Bell Pepper – sliced
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • 1/4 cup Apple Juice

In a large skillet over medium heat, brown all sides of the sausages, slice & set aside

Melt butter in the skillet, stir in the onions & garlic & cook for 2-3 minutes

Add bell peppers, season with herbs & stir in apple juice

Continue to cook & stir until peppers & onions are tender

Return sausage to the skillet with the vegetables, reduce heat to low, cover & simmer for 15 minutes or until sausage is heated through (add a little more apple juice while simmering if needed)

Serve over spaghetti with parmesan cheese
