Peanut Chicken

Starting on Saturday I have been making a few freezer meals each day & this is one of the new ones I have tried out

Of course, it wouldn’t be the same if I didn’t adapt the recipe to suit me, so here is my version of this from kojodesigns

Serves: 6                    Calories: 322

Bagging Day

  • 2 lbs Chicken Breast – chopped in bite-sized chunks
  • 2 cups Onions – sliced
  • 2 cups Carrots – julienned
  • 2 cups Zucchini – finely diced
  • 1 Red Pepper – sliced
  • 1/2 tsp Lime Zest
  • 2 tbsp Lime Juice
  • 3 tbsp Soy Sauce
  • 2 tbsp Corn Flour/All Purpose Flour
  • 4 cloves Garlic – minced

Cooking Day

  • 3/4 cup Chicken Broth
  • 5 tbsp Peanut Butter
  • 1 can Coconut Milk
  • 1/2 small bag Peas – frozen

Put the above ingredients in a large freezer bag & freeze flat

Thaw in the fridge & dump the contents of the bag into the slow cooker stoneware

Whisk together chicken broth & peanut butter & add to the stoneware & cook on LOW for 5-6 hours

5 minutes before serving, add the coconut milk & peas

Serve with chopped peanuts/cashews & cilantro & serve over rice

NOTE: to make it spicy, add 1/2 tsp red curry paste before serving
