Brazilian Chicken in Coconut Milk

Brazilian food anyone? This was delicious & pretty easy & quick to make. Why don’t you go around the world in a week of delicious dishes you have never tried before?

Serves: 6                    Calories: 228

  • 1 tsp Cumin
  • 1 tsp Cayenne Pepper
  • 1 tsp Turmeric
  • 1 tsp Coriander – ground
  • 4 Chicken Breasts – skinless & boneless
  • 2 tbsp Olive Oil
  • 1 Onion – chopped
  •  1 tbsp Ginger – minced
  • 2 Jalapeno Peppers – seeded & chopped
  • 2 cloves Garlic – minced
  • 3 Tomatoes – seeded & chopped
  • 1 (14oz) can Coconut Milk
  • Fresh Parsley – chopped

In a medium bowl, mix together the cumin, cayenne pepper, turmeric & coriander

Place the chicken in the bowl, season with salt & pepper & rub all over with the spice mixture

Heat 1 tbsp oil over a medium heat in a large skillet. Once hot, add the chicken & cook for 10-15 minutes on each side (until cooked through)

Remove the chicken & set aside

Heat the remaining oil in the same skillet

Add the onion, ginger, jalapeno & garlic & cook, stirring for 5 minutes or until tender

Mix in the tomatoes & continue cooking for 5-8 minutes

Stir in the coconut milk & serve over the chicken on a bed of rice or pasta

Garnish with parsley
