Tomato Basil Chicken

This evening as my husband was working late I decided to feed the kids at their usual time & then make something special for us later I had a pile of tomatoes left from the garden which added wonderful flavour to this dish & adding the fresh basil growing on my window sill, this made for a very tasty meal. All made in under 30 minutes!

Serves: 4                    Calories: 261

  • 2 Chicken Breasts
  • Salt & Pepper – to season
  • 2 tbsp Olive Oil
  • 2 cups Tomatoes – chopped
  • 2 tsp Garlic – minced
  • 1/4 cup Cold Butter
  • 1/2 cup Fresh Basil – chopped
  • Fresh Parmesan – grated
  • Pasta of your choice

Heat a medium skillet with oil over a medium heat Season chicken with salt & pepper Boil a pan of water for cooking the pasta. Whilst cooking, add the chicken to the pan & start cooking Cook the chicken for about 4-5 minutes on each side (until juices run clear & internal temp is 155°F) Add tomatoes to the pan along with the basil, butter & garlic & some extra salt & pepper Keep the sauce warm on a low heat, remove the chicken from the pan & rest for a couple of minutes while you drain the pasta Cut the chicken into slices & arrange on the top of each bowl of pasta. Divide the sauce between the bowls of pasta & chicken Top with a few sprigs of fresh basil & freshly grated parmesan cheese Now sit down & enjoy it! P.S. Do make sure to use fresh tomatoes, it brings so much more to the dish than tinned tomatoes ever could 😉 Tomato Basil Chicken
