Orange Chicken & Vegetable Stir Fry


On Monday evening I made a delicious Chinese meal of Orange Chicken & Vegetable Stir Fry with Cantonese Fried Rice

We were in need of something very tasty as we had friends joining us for dinner. It was a very enjoyable evening finished off with Chocolate Cobbler & ice cream!

If I am to give just one tip when making this dish it is to ensure that your broccoli is not overcooked. Mine was a little too mushy for my liking

The picture is not great, I couldn’t find my camera, so had to use my husband’s phone to take the picture, but maybe I will make it again some time soon & take a better picture

Serves: 6

  • 1/2 cup Orange Juice
  • 2 tbsp Soy Sauce (check gluten-free if needed)
  • 2 tbsp Rice Vinegar
  • 1 tbsp Oyster Sauce
  • 1 tbsp Orange Zest
  • 2 cloves Garlic
  • 1 tsp Ginger – minced
  • Sugar – to taste
  • 1 lb Chicken Breast
  • Salt & Pepper – to season
  • 3 tbsp Corn Starch
  • 4 cups Broccoli, Carrots, Mushrooms – chopped
  • 1/2 cup Onion – chopped

Blend together the orange juice, soy sauce, rice vinegar, oyster sauce, orange zest, garlic & ginger

Taste the sauce & add sugar as needed & blend again for a few more seconds

Heat the sauce in a large skillet over a medium-high heat for 5 minutes, then transfer to a heatproof bowl

Season the chicken with salt & pepper, then add the cornstarch & massage it in with your hands

If using fresh broccoli, boil the broccoli for 3-5 minutes until soft enough to pierce with a fork yet firm

Move the vegetables to the side & wipe down the skillet

Heat 1 tbsp of oil in the skillet over a medium-high heat

Cook the onion & chicken until the chicken is cooked through add the remaining vegetables & stir fry them for 2 minutes. Add a few tbsps of sauce

Add a few tbsp of sauce at a time, allowing about 15 seconds at a time between the additions

Spoon over rice & serve immediately
