Kimberle’s Thai Coconut Chicken Curry

The picture is not the best but the taste IS the best! I will get a new & better picture when I make it again tonight

This is a dish from a good friend of mine Kimberle Peterson, she brought it to a meal planning & recipe taste/swap that we had & it was so delicious

It is really fast to make, so can be done in about 30 minutes (or the length of time it takes to cook the rice!)

Serves: 6-8

  • Large package Chicken Thighs – skinless & boneless cut into chunks
  • 1 Sweet Onion – sliced
  • 2 tbsp Olive Oil
  • Salt & Pepper – to taste
  • 3-4 tbsp Curry Powder
  • 1/4 cup Brown Sugar
  • 1/2 cup Smooth Peanut Butter
  • 1 can Coconut Milk
  • Juice 1 Lime
  • Chopped Peanuts OR Cashews

Heat oil in a large skillet & stir fry chicken & onions until lightly browned

Season with salt & pepper liberally

Add curry powder, stir & cook for about 1 minute to allow spices to bloom

Stir in brown sugar & peanut butter & cook until well mixed & creamy

Add coconut milk & simmer for 5 minutes or longer

Just prior to serving, add lime juice & taste for seasonings

Serve with coconut rice & naan bread
