Kuyteav (Cambodian Soup Noodles)

Last night I made these for our dinner. They were very delicious. It actually turned out to be a very simple dinner to make, which was very helpful due to the many things I had to do yesterday & to add on top of that I was not feeling too well. I have had a cold turned sinusitis for a few days now & have found it hard to concentrate on things

Pretty much as long as you make your broth & chop up your veg & meat it will take only about 20 minutes to make (& that is mainly the time it takes to boil the water needed to cook your rice noodles)

  • 5 quarts Chicken OR Pork Broth (I have a 5 quart pot that I filled)
  • 1 lb Pork Loin – thinly sliced
  • 1/4 cup Vegetable Oil
  • 15 cloves Garlic – finely chopped
  • 1/4 cup Sugar
  • 4 tsp Salt
  • 1/2 lb Ground Pork
  • 1 lb Vermicelli Rice Noodles
  • Soy Sauce (use gluten-free if needed)
  • Olive Oil
  • Fish Sauce
  • 1 cup Baby Bok Choy – roughly chopped
  • 4 Spring Onions – sliced 1/4″
  • 1/2 lb Bean Sprouts
  • 1/2 cup Cilantro – chopped
  • 1 cup Shrimp – cooked & shelled

You can either make your own broth OR use bouillon. Heat on the stove & keep warm on a low heat

Over a medium heat, cook the garlic & pork loin in a skillet until cooked through & set aside

Add the sugar & salt to the broth stirring until dissolved then cover

Remove 1/2 cup broth & put into a small saucepan. Simmer the ground pork in the 1/2 cup of broth until cooked through. Drain & set aside

Bring a large pot filled with water to the boil & place the noodles in. Allow them to soak for 30 seconds or so until they are soft

Remove from the pot & drain in a strainer

Divide the noodles among large soup bowls, 1 per person & cover with broth. Add a little soy sauce & olive oil to each bowl & stir to combine

Put all the remaining ingredients in small bowls out on the table

Each person can now add whatever ingredients they would like to their individual bowls
