Mexican Chicken Pinwheels


These were delicious, just make sure that you don’t put too much filling on the tortillas. If you want something different & easy then give these a try from Laura’s Sweet Spot

  • 2 (8oz) packages Cream Cheese
  • 1 1/2 cups Mexican Cheese Blend
  • 3 Chicken Breasts – cooked & shredded
  • 4 Spring Onions – chopped
  • 10 oz can Diced Tomatoes – drain & reserve juice
  • 1 tbsp Green Chillis – chopped
  • 1 package large Tortillas
  • 2-3 tbsp Taco Seasoning

Mix both of the cheeses until well blended together

Add the remaining ingredients using some of the juice as needed to thin down the mixture

Cover & refrigerate for at least 1 hour

Spread one heaped spoonful of mixture over the tortilla

Roll & cut into slices
