Mum Perry’s Leek & Potato Soup

It has just been brought to my attention that after making it for years, I have not added this wonderful soup to my blog, so here goes!

This is a total hit in our home, in fact, Rhys got very upset last night at dinner because he thought we were having leek & potato soup, so we decided that it would be a wonderful thing to have considering the weather

Serves: 6

  • 2-3 large Leeks – washed & chopped
  • 3-4 large Potatoes – peeled & chopped
  • 4-6 cups Water
  • 2 Vegetable Stock Cubes (I use McCormick’s as it has no msg & is gluten-free)

In a large saucepan, add all ingredients. Depending upon how thick you like to have your soup will depend on how much water you will want to add. You can put in 4 cups if you like it really thick or going up to 6 cups for runny soup (I personally like a thicker soup)

Heat over a medium high heat until the potatoes are cooked through. It doesn’t matter if you overcook them as all the contents of the pan will be used

Once cooked, cool slightly before blending small amounts in a blender, then pour into a bowl to allow to cool

Add salt & pepper to taste
