Jamaican Rice & Peas

This fabulous recipe comes from the Cook like a Jamaican blog. It was a great accompaniment to the jerk chicken.

  • 1 can Kidney Beans – including liquid
  • 1 can Coconut Milk
  • Water
  • 2 cloves Garlic – chopped
  • 1 small Onion – chopped
  • 1 tsp Thyme
  • 2 tsp Salt
  • 1 tsp Pepper
  • 2 cups Long Grain Rice – rinsed & drained

Drain the liquid from the beans into a measuring cup & add the coconut milk & enough water to make 4 cups of liquid

Add the liquid, beans, garlic, onion, thyme, salt & pepper into a large pot & bring to a boil

Add the rice & boil on high for 2 minutes

Turn heat to low & cook covered until all the water is absorbed (about 15-20 minutes)

Fluff with a fork before serving & enjoy!
