Chicken Empanadas


A friend & I got together to make these a few weeks months back. They were very delicious & I even still have some in the freezer!

I have had this post on the go for months, but have never seemed to be able to finish it until now. I am usually not a big fan of corn tortillas, but this was actually very tasty & great to keep in the freezer for one of those times when a delicious snack or a quick dinner is needed!

Empanada Dough

  • 1 1/2 cups Masa Harina
  • 1/2 cup All-Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 tbsp Solid Vegetable Shortening
  • 1 cup Water

Combine masa harina, flour, baking powder & salt in a medium bowl & mix thoroughly

Mix shortening in with a fork until it resembles coarse crumbs. Add a cup of water, a little at a time, working the dough until it comes together

Turn the dough onto a lightly floured surface & pat into a ball. Refrigerate until firm, about 20 minutes

Using a small ball of dough, roll it into a circle, or use a tortilla press

Chicken Filling

  • 2-3 Chicken Breasts – cooked & shredded
  • 1 tbsp Paprika
  • 1 tsp Cumin
  • 1/2 tsp Chilli Powder
  • 1/4 cup Red Pepper – chopped
  • 8 oz Mexican Cheese Blend
  • 4 oz Cream Cheese – softened

Mix together all the filling ingredients & put to one side

Using a pasty press, place the circle of dough onto it, drop a spoonful of filling into the middle of the dough circle & fold it together to form the empanada

Form the empanadas one at a time until all the dough has been used

Deep or shallow fry in vegetable oil until golden brown. Once cooked they can be eaten with sour cream & guacamole, or cooled & frozen

If frozen, do not thaw, reheat in a preheated oven at 350°F/180°C/Gas Mark 4 for 10 minutes & serve immediately
