Kathy Harker’s Ranch Chicken

Mmmmmmmmmm, pair it with a nice salad & you have an easy, wonderful meal. I would like to say that it was so delicious that I forgot to take photos, but that isn’t entirely true, I totally forgot until there was 2 little pieces left

  • 8 Chicken Breasts – boneless & skinless
  • 3/4 cup Cornflakes – crushed
  • 3/4 cup Parmesan Cheese – grated
  • 3 tbsp Ranch Dressing Mix
  • 1/2 cup Butter – melted

Preheat oven to 350°F/180°C/Gas Mark 4

In a shallow bowl, combine the cornflakes, cheese & ranch mix

Dip the chicken in butter & roll in the cornflake mixture to coat

Place in a greased baking dish & bake uncovered for 45 minutes, or until the chicken juices run clear
