Curried Rice with Shrimp

This dish is so delicious. We are big fans of shrimp/prawns in this home & equally as big on curry, so this was a perfect dish for us!

I think I will make this again next week, maybe even have it on a regular basis

  • 1 tbsp Olive Oil
  • 1 large Onion – chopped
  • 2 Carrots – chopped
  • 2 cloves Garlic – chopped
  • 2 tsp Curry Powder
  • 4 tbsp Frozen Peas
  • 1 cup White Rice
  • 1 1/2 lbs Large Shrimp – peeled & deveined
  • 1/2 cup Fresh Basil

In a large skillet, over a medium heat, heat olive oil until hot

Add the onion & carrots, & cook, stirring occasionally, until soft for about 6 minutes

Add the garlic, peas & curry powder & cook, stirring until fragrant, about 2 minutes

Add the rice, 2 1/2 cups of water & 1/2 tsp each of salt & pepper & bring to the boil

Reduce heat & simmer, covered, for 15 minutes

Season the shrimp, nestle them in the partially cooked rice. Cover & cook until the shrimp are opaque throughout, 4-5 minutes. Fold in the basil & serve
