Black Bean & Corn Salsa


I made this on Sunday to have as part of our meal with some family. It was really good. If you like salsa & chips then you should try this as a refreshing alternative to tomato salsa

I got the recipe from Allrecipes & will definitely make it again. It makes 16 servings, so best to make it for a crowd (or halve it!)

  • 1 (15oz) can Black Beans – rinsed & drained
  • 1 1/2 cups frozen Corn – thawed
  • 1 3/4 cup assorted Bell Peppers – minced
  • 1/2 cup Red Onion – minced
  • 1 tbsp Fresh Cilantro – minced
  • 1/2 cup Sour Cream
  • 1/4 cup Mayonnaise
  • 2 tbsp Red Wine Vinegar
  • 1 tsp Ground Cumin
  • 1 tsp Chilli Powder
  • 1/2 tsp Salt
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Black Pepper

In a medium bowl, combine together the black beans, corn, peppers, onion & cilantro

In a small bowl, whisk together the remaining ingredients. When thoroughly combined, pour over the vegetables & beans & toss gently to coat
