Better Than Baked Beans with Spicy Wedges

This is another recipe courtesy of Mum. I was pretty cautious even after being told how much my nieces & nephew loved it. Despite my hesitation, it was very delicious, nutritious & affordable

  • 1 tsp Vegetable Oil
  • 1 Onion – halved & thinly sliced
  • 2 slices Streaky Bacon – cut into largish pieces
  • 1 tsp Brown Sugar
  • 1 (400g) can Chopped Tomatoes
  • 200ml Chicken OR Vegetable Stock (check gluten-free if needed)
  • 1 (410g) can Cannellini, Butter OR Haricot Beans (in water)

Heat oil in a skillet over a medium heat & fry onions & bacon together for 5-10 minutes

Stir in sugar, tomatoes & stock & season to taste

Simmer for 5 minutes

Add beans & simmer for a further 5 minutes until the sauce has thickened

Serve with spicy wedges

Better Than Baked Beans

To make the spicy wedges;

  • 1 tsp White Flour
  • 1/2 tsp Cayenne Pepper, Paprika OR Mild Chilli Powder
  • 1 tsp Mixed Herbs (optional)
  • 2 Baking Potatoes – each cut into 8 wedges
  • 2 tsp Vegetable Oil

Heat oven to 350°F

Mix the flour, spices & herbs together. Season to taste

Toss the potatoes with oil & the flour mixture until well coated

Bake in a roasting tin for 35 minutes or until cooked through
