So, tonight’s dinner is my lovely dinner for 12 & a new dish that I found on Pinterest, The Best Broccoli of Your Life
Well, that certainly is a lot to live up to….. I can’t say that it is the best broccoli of my life, but it is pretty good, even the kids ate it!
- 4-5 lbs Broccoli – cut into florets
- 5 tbsp Olive Oil
- 1 1/2 tsp Salt
- 1/2 tsp Ground Pepper
- 4 cloves Garlic – peeled & sliced
- Juice of 1 Lemon
- 3 tbsp Pine Nuts
- 1/3 cup Parmesan
Preheat oven to 425°F/220°C/Gas Mark 7
Arrange broccoli on a baking tray & toss with oil, salt & pepper. Scatter the garlic slices over the broccoli & bake for 20-25 minutes
Once cooked, sprinkle with lemon juice, pine nuts & parmesan
