Brown Rice Salad


My husband really liked this salad, but I thought there was too much dressing on it. I made it to accompany the Pan-Seared Chicken with Balsamic Cream Sauce. I thought they went pretty well together, although next time I would add some steamed broccoli or cauliflower on the side as well

  • 2 cups Brown Rice – cooked (I find that 1 cup of uncooked makes about 2 cups of cooked)
  • 1/4 cup Red Onion – diced
  • 1/2 cup Celery – diced
  • 1/4 cup Dried Cranberries
  • 1 tbsp Sugar
  • Balsamic Vinaigrette Dressing

Combine the rice, red onion, celery, cranberries & sugar in a bowl

Add vinaigrette until the salad is covered well, but not too much

Cover & refrigerate, serve cold
