Golden Autumn Soup


We love a good soup in our home & this one I made for having with our Christmas dinner this year. It serves 12, so great for a big gathering

Our son loves soup, but only if it doesn’t have vegetables in it. His favourite is my Leek & Potato soup – especially because it doesn’t have vegetables in it (according to him!)

  • 5 medium Parsnips – peeled & chopped
  • 5 medium Carrots – peeled & sliced
  • 2 medium Onions – chopped
  • 1 medium Sweet Potato – peeled & chopped
  • 2 Celery stalks – chopped
  • 2 Bay Leaves
  • 3 1/4 cups Chicken Broth (check gluten-free if needed)
  • 2 cups Half & Half
  • 1 tsp Dried Tarragon
  • 1/4 tsp Black Pepper

In a dutch oven or soup pot, combine parsnips, carrots, onions, sweet potato, celery, bay leaves & chicken broth

Bring to a boil, reduce heat & simmer covered for 30 minutes, or until tender

Remove from the heat, remove bay leaves & let cool for 20 minutes

Puree until smooth in batches, & return to pot

Add half & half, tarragon & black pepper & heat through
