Loaded Baked Potato Soup


‘Tis the season for warm hearty soup, especially if it is delicious! Try out Disney’s famous Loaded Baked Potato Soup, trust me, it is delicious

This serves 6, but I cut it in half & it was enough for us, with enough for lunch tomorrow. This is my last post before Christmas & possibly the New Year, so Merry Christmas to you all & may this season last all year long in our hearts

  • 1 lb Bacon – roughly chopped
  • 1 medium Onion – diced
  • 1 large Carrot – peeled & diced
  • 3/4 cup Celery – diced
  • 4 large Russet Potatoes – peeled & diced
  • 4 medium Red Potatoes – diced
  • 1/4 cup Flour
  • 2 cups Chicken Broth
  • Salt & Pepper – to taste
  • 4 cups Whipping Cream

In a large stockpot, over medium heat, fry bacon until crisp

Remove bacon & drain on paper towel, reserving half for garnish

In bacon fat, cook onions, carrots & celery until the onions are translucent. Add potatoes & cook for 4 minutes, stirring occasionally

Whisk in flour & stir constantly over low heat until the flour is cooked & the mixture has thickened slightly about 5-7 minutes

Add chicken stock & half the bacon. Season with salt & pepper

Over medium-high heat, bring the soup to a simmer & cook for 25 minutes or until the potatoes are soft

Add cream & simmer for 5 minutes

Adjust thickness by adding stock. Soup should have a creamy consistency

Season to taste & garnish with toppings (chopped chives, bacon bits, sour cream, grated cheese)
