Broccoli Chicken Bake

Easy, fast & delicious! The dish was a little too salty from the condensed soup, & thinking that breadcrumbs would go just as well as the dry stuffing mix.

Coming up to Christmas I need some of these fast dishes that the family love. Life gets so busy with so many things to fit into such a small amount of time. Soup, appetizers & maybe a drink or two will be among the next few posts, so stay tuned!

  • 4 Chicken Breasts – boneless, skinless
  • 1 lb Broccoli Florets
  • 1 (10.75oz) can Condensed Cream of Mushroom Soup
  • 1 tbsp Mayonnaise
  • 1 cup Cheddar Cheese – grated
  • 1 cup Panko Breadcrumbs

Preheat oven to 350°F/180°C/Gas Mark 4

Cook chicken & shred it, meanwhile, steam broccoli until crisp but tender

In a small bowl, mix together the soup & mayonnaise & set aside

In a baking dish, layer the chicken, broccoli, soup mixture, cheese & top with breadcrumbs

Bake for 25-30 minutes, until golden
