Gingerbread Cupcakes


Getting ready for Christmas? Started the baking yet? Yesterday I started & today I finished it. Mince Pies, Cherry Chocolate Cookies (for our cookie exchange), Cornflake Cakes & Gingerbread Cupcakes

These were pretty good, they had too much baking powder in though. They rose like crazy, it needs to be tweaked a little. I will update when I have made them again. This made 32 mini cupcakes

  • 4 oz Butter – softened
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 cup Flour
  • 1 1/2 tsp Baking Powder – *EDIT-21/12/2013* 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1 tsp Allspice
  • 1/4 cup Milk

Icing

  • 8 oz Cream Cheese – softened
  • 1 1/2 cup Icing Sugar
  • 1 squirt Lemon Juice

Preheat oven to 400°F/200°C/Gas Mark 6 & line a muffin tin with cupcake cases

Mix dry ingredients in a large mixing bowl & mix the wet ingredients in a smaller bowl. Mix together well & fill cases 1/2-2/3 full

Bake for 10 minutes (mini cupcakes) 15-18 minutes (regular)

Mix icing ingredients together & when cool, ice cupcakes
