Mexican Rice


After looking for some authentic Mexican recipes, I stumbled upon this one from allrecipes & it went down a treat with kids & adults alike. This serves 6 people

  • 2 tbsp Olive Oil
  • 1 cup Rice
  • 1/2 large Onion – diced
  • 1/2 tsp Salt
  • 1/8 tsp Ground Cumin
  • 1/8 tsp Ground Black Pepper
  • 2 1/2 cup Water
  • 1/3 cup Tomato Sauce
  • 1 tbsp Chicken Bouillon (check gluten-free if needed)

Heat oil in saucepan over medium heat. Add rice & onion & stir until browned

Add salt, cumin & pepper & pour water over the rice mixture

Stir in tomato sauce & bouillon & increase the heat to medium high, put on lid & bring to a boil for 10 minutes

Reduce heat to medium-low until the rice is tender & the water has been absorbed, about 15-20 minutes
