S’more Brownies


S’mores without a campfire? Brownie s’mores are the way to go! These are simply delicious, but sinful. I made these for our bonfire night celebration with some friends, & must say that they were a perfect ending to our meal.

  • 1/2 cup Butter
  • 1 cup White Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1/3 cup Cocoa Powder
  • 1/2 cup All-Purpose Flour
  • 1/4 tsp Salt
  • 1/4 tsp Baking Powder
  • 4 Graham Crackers – broken into 1″ pieces
  • 1 cup Mini Marshmallows
  • 750 g Milk Chocolate Bar – coarsely chopped

Grease & flour an 8″ square pan & preheat oven to 350°F/180°C/Gas Mark 4

In a large saucepan, melt the butter over a low heat. Remove from the heat & stir in sugar, eggs & vanilla

Beat in cocoa, flour, salt & baking powder & spread the batter into the prepared pan

In a medium bowl, toss together graham crackers, marshmallows & chocolate

Bake brownies for 20-25 minutes (or until almost done), remove from the oven & sprinkle the  s’more mixture over the top

Continue baking until the brownies are done, or until a toothpick inserted in the centre comes out clean. Be careful not to overcook them

Wait until cool to cut them into squares & serve
