Balsamic Bruschetta Chicken

Oh my, oh my, oh my ……….. This was a litte bit of heaven in my mouth!

Bruschetta (pronounced “Bru sket ta”) is an antipasto from Italy. This dish takes the divinity of bruschetta & combines it with chicken & cheese, how can you go wrong with that combination!

The original recipe that I found here had way too much for 4 pieces of chicken. I halved the recipe for 3 chicken breasts & still had enough for 1 more

Serves: 4

  • 4 Chicken Breasts
  • 1/4 cup Balsamic Vinegar
  • 1/2 tbsp Olive Oil
  • 1 clove Garlic – minced
  • Salt & Pepper – to taste
  • 2 Roma Tomatoes – diced
  • 1/4 Sweet Onion – chopped
  • 1 clove Garlic – minced
  • 1 tbsp Balsamic Vinegar
  • 1/2 tbsp Olive Oil
  • Salt & Pepper – to taste
  • 1/2 cup Mozzarella – grated
  • Fresh Basil – thinly sliced

Add the first 5 ingredients into a large ziploc bag, shake to mix & refrigerate until ready to use

Combine the next 6 ingredients in a bowl & set aside

Using a counter top grill or a grill pan, grill the chicken until cooked through

Transfer to a baking sheet covered in tin foil & top each piece of chicken with some of the bruschetta & cheese

Broil for about 5 minutes & top with basil to serve
