Primavera Linguini


I have had this recipe for a long time & never made it, so I thought it was about time that I tried it. I did make some changes from the original, so this is my delicious revised version

  • 500 g Linguini
  • 2 cups Broccoli Florets
  • 1 cup Snow Peas OR 3/4 cup cooked Peas
  • 1 Red/Green Pepper – thinly sliced
  • 1 cup Onion – chopped
  • 2 cloves Garlic – minced
  • 2-4 Chicken Breasts – boneless, skinless & cut into strips
  • 1 can Cream of Chicken Soup
  • 1/2 soup can of Milk

In a large skillet, saute onion & garlic until just soft & set aside

Saute broccoli & peppers in the same skillet & set aside

Cook pasta for 10 minutes or until al dente & drain

Saute the chicken until no longer pink

In a large serving bowl, combine the soup, milk, onion, chicken & vegetables. Add the pasta & toss gently

Sprinkle with salt, pepper, basil & parmesan cheese
