Mango Chicken Curry

This was delicious, although different to the normal types of curry that I eat. It is a sweet curry, & my husband is not a big fan of sweeter dishes, but it was good!

  • 2 tsp Butter
  • 1 Onion – chopped
  • 2 cloves Garlic – minced
  • 1 1/2 lb Chicken Breast – cut into bite sized pieces
  • 2 tbsp Mild Curry Paste
  • 1/3 cup Mango Chutney
  • 1 (14oz) can Diced Tomatoes – drained

Melt butter in a large skillet over a medium-high heat & add onions & garlic. Saute until translucent

Add chicken & cook for 30 seconds while stirring

Add curry paste, stirring until chicken is well coated. Add chutney & tomatoes & cook until chicken is cooked through, about 10 minutes

Serve with rice & naan bread
