Bacon Wrapped Garlic Cream Cheese Chicken

This was a very messy dish to make, but was so delicious. My husband, a man of few words, said “it is delicious”, now that is a compliment! You can substitute the flavours in the cream cheese to suit your palatte if you are not a fan of garlic, but don’t substitute the bacon, it brings so much moisture & flavour to the chicken

  • 12 Chicken Strips (I cut my own from chicken breasts)
  • 1 package Bacon
  • 4 oz Cream Cheese
  • 1 tsp Garlic – minced
  • 1 tsp Basil – dried
  • 1/8 tsp Black Pepper
  • 1 tbsp Butter
  • Toothpicks

In a bowl, combine the cream cheese, garlic, basil & pepper & set aside

On a piece of wax paper, lay out 6 chicken strips, spread with cream cheese mixture, top with another piece of chicken & wrap with strips of bacon. I found it really helpful to use toothpicks to hold everything together

* If you don’t want to use all the chicken it can be frozen now. Flash freeze in the freezer & as soon as they are frozen, store in a freezer bag. When ready to use, thaw in the refrigerator

In a large skillet, melt 1 tbsp butter, then add chicken & cook for 3 minutes on each side on a medium heat

Reduce heat to low, cover & cook for 8 minutes or until chicken is cooked through
