Creamy Mushroom Parmesan Chicken

This is a family favourite & so easy. It is one of those gourmet with minimal work dishes that is so perfect to serve to guests or as just a family every day meal. Not one person that I have made it for has said they don’t like it….try it!

  • 4 Chicken Breast Halves – skinless & boneless
  • 4 tbsp Butter – melted
  • 1 cup Flour – for coating
  • 1 cup Heavy Whipping Cream
  • 1/2 lb Mushrooms – sliced
  • 1/2 cup Parmesan Cheese – grated

Preheat oven to 350°F/180°C/Gas Mark 4

Saute mushrooms & set aside, rinse & dry chicken

Put butter into one bowl & flour in another. Add to the flour salt & pepper & any other seasonings you want. I have used italian seasoning, cayenne pepper & basil at different times

Dip chicken into butter & then coat in flour mixture. Place coated chicken in a baking dish

Top with mushrooms, add cream to just cover & top with parmesan cheese

Bake for 30-45 minutes & serve with mashed potatoes & peas
