Mary Perry’s Rice Salad

Since we have been married I haven’t made this, but making it today took me down memory lane! It is one of the salads I used to love growing up, and I am excited to have it with ribs for dinner tonight!

  • 2 cups Uncooked Rice – cooked according to package instructions & cooled
  • 1/2 English Cucumber – diced
  • 2 medium Tomatoes – diced
  • 2 can Sweetcorn – drained
  • 1/2 Green Bell Pepper – diced (I used an orange one as we don’t like green ones)
  • 1/4 cup French Salad Dressing (vinigarette)

Once the rice is cooled add the remainder of the ingredients & stir together until thoroughly mixed

Serve with a main dish or have by itself
