Beef & Broccoli with Oyster Sauce

This recipe was taken from the Williams-Sonoma Asian Cookbook that my son gave me for my first Mother’s Day. It is so delicious, much better than a chinese takeaway! I made it for our early Chinese New Year celebration. One tip: DO NOT overcook the broccoli!!!

  • 1lb Flank Steak – cut across the grain into 3″ strips 1/4″ thick
  • 1 tbsp Cornstarch
  • 1/4 tsp each Salt & Sugar
  • 1/2 tsp Baking Soda
  • 2 cups small Broccoli Florets
  • 3 tbsp Peanut Oil
  • 2 cloves Garlic
  • 2 slices Ginger – smashed with the side of a knife
  • 1 small Onion – cut into 1″ dice
  • 1 tbsp Chinese Rice Wine

For the Sauce:

  • 2 tbsp Oyster Sauce
  • 1 tbsp each Dark & Light Soy Sauce
  • 1 tsp Peanut Oil
  • 1 tsp Cornstarch
  • 1/2 tsp Sugar
  • 1/8 tsp White Pepper

In a bowl, stir together the cornstarch, salt, sugar, baking soda & 2 tbsp water. Add the beef & stir until well mixed. Set aside at room temperature for 30 minutes

In a bowl, combine the ingredients to make the sauce along with 2 tbsp water & set aside

Blanch the broccoli until just tender, 3-4 minutes. Drain, rinse under running cold water until cool, drain again & set aside

Take the beef from the bowl & pat dry with paper towel. Stir fry the beef in a hot wok with 2 tbsp peanut oil for 3-4 minutes. Remove when the beef just turns opaque & drain

Wipe out the wok & reheat, adding the remaining 1 tbsp oil, until very hot

Add the ginger & garlic & stir fry until golden brown, 15-20 seconds. Lift out & discard

Add onion & stir fry for about 5 minutes until just tender. Pour in the rice wine & stir the pan to dislodge any bits from the bottom. When evapourated, add the sauce, stir & bring to a boil

Immediately add the beef & broccoli & stir fry until the sauce thickens, about 3 minutes

Transfer to a warmed bowl & serve
