Lianna Nelson’s Crispy Waffles


I made these for James’ birthday breakfast. They were as delicious as Lianna said they would be!

  • 2 1/4 cups Flour (scant)
  • 2 1/2 tbsp Sugar
  • 2 tbsp Baking Powder
  • 1/2 tsp Salt
  • 2 1/4 cups Milk
  • 2 Eggs – separated
  • 1/2 cup Canola Oil

In a large bowl, combine the dry ingredients & whisk until evenly mixed. Make a well in the centre & set aside

Beat egg yolks, milk, and oil. Add to well & beat until moistened

Beat egg whites until stiff and fold into batter, leaving tiny clouds of egg white throughout batter

Pour onto an oiled, preheated waffle iron. Bake about 5-7 minutes, until the waffle releases when the top of the waffle iron is raised. Makes 10 waffles
