Pork Chop & Rice Casserole


So, I need your help. I made this really delicious casserole on Saturday, but the pork chops were way too dry. Any ideas of what can keep them moist?

  • 1 cup White Rice – uncooked
  • 4 Pork Chops
  • 2 cups Hot Water
  • 1 can Cream of Mushroom Soup
  • 1 package Onion Soup Mix
  • 5 Mushrooms – sliced
  • 1 small Onion – chopped

Preheat oven to 350°F/180°C/Gas Mark 4 & grease a 9 x 13″ pan

Scatter the uncooked rice evenly in the pan & then scatter the mushrooms & onions on top

In a separate bowl, combine the soups & water. Place the chops in the pan & pour the liquid mixture over the top

Cover the pan with tin foil & bake for 1 hour, uncover & bake for a further 30 minutes until the rice is done
