Eryn Clifton’s Banana Muffins

This recipe came from my old roommate. I made mini muffins out of it as they are easier for the kids to eat.

  • 3 Bananas – mashed
  • 3/4 cup Sugar
  • 1 Egg – beaten
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 1/2 cups All-Purpose Flour
  • 1/3 cup Margarine

Preheat oven to 350°F/180°C/Gas Mark 4

Cream sugar & shortening

Blend eggs & bananas & add to creamed mixture at the same time as the remaining ingredients

Divide into greased muffin tins & bake for 20-30 minutes
