Sweet Pepper Fettuccine


So tonight’s dinner had to be really quick because we got home from church at 4.30 & James had to leave for a Priesthood meeting at 5.30, but we did it, and it was delicious. Bear in mind that you can always add grilled chicken or shrimp to the top

  • 12 oz dry Fettuccine
  • 2 Red Bell Peppers – julienned
  • 3 cloves Garlic – minced
  • 3/4 tsp Cayenne Pepper
  • 1 cup Sour Cream
  • 3/4 cup Chicken Broth
  • 3/4 cup Parmesan Cheese – freshly grated
  • Salt & Pepper – to taste

Cook the pasta according to the packet directions until al dente & drain

Meanwhile, on a medium heat with a little oil, saute the red peppers, garlic & cayenne pepper for 3-5 minutes

Stir in the sour cream & broth & simmer for 5 minutes, uncovered. Remove from heat & stir in cheese

Toss the pasta in the hot sauce, season to taste & serve
