Coconut Chicken Curry

I’m not sure where I found this recipe, but it is tonight’s dinner! It was yummy, but lacked a bit in the flavour department. I think it needs more curry powder

  • 1/2 cup All-Purpose (Plain) Flour
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 12 Chicken Thighs – skinless
  • 1 tbsp Vegetable Oil
  • 2 Onions – chopped
  • 4 cloves Garlic – minced
  • 1 tbsp Curry Powder
  • 1/2 cup Chicken Stock
  • 1 (14oz) can Coconut Milk
  • 4 Carrots – peeled & sliced
  • 1 (19oz) can Chickpeas – drained & rinsed
  • 1 cup Green Peas OR Snow Peas
  • 1 Granny Smith Apple – unpeeled & cut into 1″ chunks
  • 1 cup Plain Yoghurt
  • 1/2 cup Cashew Nuts
  • 1/2 cup Shredded Sweetened Coconut – toasted

In a ziploc bag, combine flour, salt & pepper. Add the chicken & toss to coat. When coated, place the chicken in the slowcooker, reserving the excess flour

In a large skillet, heat the oil over medium-high heat. Add onions, garlic & curry powder. Cook, stirring, for 3 minutes, or until onions are translucent & fragrant. Sprinkle with reserved flour & stir for 1 minute

Stir in stock & coconut milk & bring to a boil. Add carrots & chickpeas, mix well & pour over chicken

Cover & cook on low for 5-7 hours or on high for 2 1/2-4 hours, until chicken juices run clear, vegetables are tender & curry is bubbling

Stir in green peas, apple & yoghurt. Cover & cook on high for 15-20 minutes, or until warmed through. Serve garnished with cashews & coconut & accompanied by rice, papadums & samosas

TIP: To toast coconut, spread flaked or shredded coconut on a baking sheet & toast in oven at 300 degrees F for 10-12 minutes or until golden
