Pizza Muffins

These are a delicious snack that can be eaten on the run & they taste just like pizza!

  • 2 cups All-Purpose Flour
  • 1 tbsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Basil – dried works best
  • 1/2 tsp Oregano – dried works best
  • 1/2 tsp Garlic Powder
  • 1 Large Egg
  • 1 cup Milk
  • 1/4 cup Cooking Oil
  • 2 tbsp Sugar
  • 1 Tomato – quartered, seeded & diced
  • 2/3 cup Cheese – grated
  • 1/4 cup Spring Onion – sliced
  • 3/4 cup Pepperoni – sliced & diced

Preheat oven to 375°F/190°C/Gas Mark 5

In a large bowl mix together the flour, baking powder, baking soda, salt, basil, oregano & garlic powder. Make a well in the centre

In a seperate bowl mix together the egg, milk, oil & sugar. Add the tomato, cheese, onion & pepperoni

Pour the ingredients from the second bowl into the well in the first & stir together until just moistened

Bake in pre-heated oven for 20 minutes, until an inserted toothpick comes out clean

Let the muffins sit in the pan for 5 minutes before removing to a wire rack to cool

Fill 12 greased muffin cups 3/4 full
