Honey & Orange Glazed Chicken

This was delicious. The sauce had lots of flavour & especially when it was combined with the baked potato added a new dimension to the flavour. I wasn’t sure how it would come out, but was very pleased with it

  • 4 Chicken Breasts
  • 4 Spring Onions – chopped
  • 1 Garlic clove – crushed
  • 3 tbsp Clear Honey
  • 4 tbsp Fresh Orange Juice
  • 1 Orange – peeled & segmented
  • 2 tbsp Soy Sauce (check gluten-free if needed)

Preheat the oven to 375°F/190°C/Gas Mark 5. Place the chicken in a shallow roasting tin & set aside

Heat oil in a small pan & fry the onions & garlic until softened, approx 2 minutes. Add the honey, orange juice, orange segments & soy sauce to the pan, stirring well until the honey has disolved

Pour over the chicken & bake, uncovered for 45 minutes, basting once or twice until the chicken is cooked. Serve in its sauce with baked potato & salad
