Filet Mignon with Bacon Cream Sauce

I first made this for Fathers Day, but forgot to take a picture, so of course, I had to make it again! I made a couple of changes from the original recipe that I found on Allrecipes

This is actually a really easy & fast dish to make, but tastes fabulous

  • 4 (4oz) Beef Tenderloin Filets
  • 1 tsp Olive Oil
  • 3 slices Bacon – chopped
  • 1 tbsp Butter
  • 1 1/2 Shallots – diced
  • 1/4 cup Half & Half Cream
  • Salt & Pepper – to taste

Preheat an outdoor grill for medium-high heat, & lightly oil the grate. Brush the filets with olive oil & cook on the grill for desired doneness (about 4 minutes per side for medium-rare)

Set the steaks aside on a platter tented with aluminium foil to rest. While the steaks are resting, prepare the sauce

Cook & stir the chopped bacon in a small saucepan over medium heat until the bacon is crisp, 3-5 minutes

Stir in the butter & shallots, & cook & stir until the shallots are soft & translucent, about 5 minutes more. If the bacon produces lots of fat, half the amount of butter used

Stir in the half & half, bring the mixture to a simmer over a medium-low heat stirring occassionally until the sauce is slightly thickened, about 8 minutes

Season with salt & pepper & serve over the steaks
